Amadori, a leading group in the Italian agri-food sector, has entered into a partnership with REDUCED, a startup specializing in upcycled food ingredients. The collaboration aims to leverage REDUCED’s proprietary fermentation technology to develop savoury food ingredients from Amadori’s processing side streams.
REDUCED’s W2T technology platform employs a unique fermentation process to transform side streams into natural savory flavorings, successfully applied to various by-products from the food and agricultural industry.
Together, Amadori and REDUCED will develop a series of savoury food ingredients utilizing Amadori’s processing side streams through the W2T platform. Prototypes are currently being developed in Denmark, and the parties intend to collectively scale up the finalized food ingredients.

“There are plenty of valuable compounds in the side stream provided by Amadori. From a flavour development perspective, residual proteins may contribute with flavour active compounds such as free amino acids and nucleotides that could be applied directly into Amadori’s ample product portfolio,” says Lorenzo Tirelli, Head of R&D at REDUCED.
