Amadori partners with REDUCED to create upcycled ingredients

Amadori, a leading group in the Italian agri-food sector, has entered into a partnership with REDUCED, a startup specializing in upcycled food ingredients. The collaboration aims to leverage REDUCED’s proprietary fermentation technology to develop savoury food ingredients from Amadori’s processing side streams.

REDUCED’s W2T technology platform employs a unique fermentation process to transform side streams into natural savory flavorings, successfully applied to various by-products from the food and agricultural industry. 

Together, Amadori and REDUCED will develop a series of savoury food ingredients utilizing Amadori’s processing side streams through the W2T platform. Prototypes are currently being developed in Denmark, and the parties intend to collectively scale up the finalized food ingredients. 

“REDUCED is developing and producing a range of upcycled food ingredients that enable manufacturers to reduce their environmental impact – without compromising on taste and flavour” says Niels Skovby Jørgensen, CCO at REDUCED. ” This circular partnership allows us to have a transparent collaboration in the full supply chain, transforming Amadori’s side streams into great tasting solutions – the work has already started, and we look forward to a productive partnership.”

With an integrated supply chain and over 9,000 employees, Amadori holds a significant presence in the European food and agricultural industry. Among the Group’s sustainability targets is the recovery of side and waste streams, aligning with global efforts to create a more sustainable world.

“There are plenty of valuable compounds in the side stream provided by Amadori. From a flavour development perspective, residual proteins may contribute with flavour active compounds such as free amino acids and nucleotides that could be applied directly into Amadori’s ample product portfolio,” says Lorenzo Tirelli, Head of R&D at REDUCED.
