Pune edition of Saksham, a knowledge-led industry platform by Elanpro, brought together hospitality professionals, kitchen consultants, engineers, compliance specialists and solution providers for structured discussions on strengthening safety systems and infrastructure discipline across food service operations.
With over 70 participants in attendance, the one-day programme focused on three operational pillars — Safety, Compliance & Audit Readiness, and Sustainable Infrastructure — reflecting the growing need for structured systems as restaurants, hotels, cloud kitchens and food retail formats scale rapidly.
The inaugural session was addressed by Mr. Atul Gokhale, Dean, SSCANS; Mr. Pramod Paleri, Founder, S&P Associates; and Mr. Rajeev Jalnapurkar, Former Chairman, Indian Association of Amusement Parks & Industries.
Technical sessions covered key operational themes including LPG safety, cold-chain management, electrical safeguards, compliance cost exposure, smart manufacturing practices and sustainable kitchen design. Speakers included Mr. Sanjay Jain, Director, Elanpro; Mr. Jesal Sampat, CEO, Pune Gas; Mr. Sanjiv Deshmukh, Kitchen Solutions; Mr. Swapnil Deshpande, Swastik Synergy Engineering; Mr. Jayaant Dongrre, Catalyst Support Services; Mr. Vishwanath Pandey, THI; Mr. Moiz Master, Alister Equipment; Mr. P. Sravan Kumar, Founding Member, HCF; and Ar. Nivedita Dileep, CII-IGBC.
Discussions highlighted that while the food service industry is witnessing rapid expansion, inconsistencies in temperature discipline, preventive maintenance systems, gas handling protocols and audit preparedness continue to expose businesses to avoidable operational and financial risks. Participants emphasised the need to institutionalise compliance as a daily operating culture rather than a periodic checklist exercise.
